Felt like Spring today as the temperature was above zero and the sun shone in a brilliantly blue sky. There was definitely some warmth to it and I had a long walk and a sit on the back patio just before lunch. It should be nice again tomorrow but we will be back in the deep freeze again on the weekend with minus numbers.
Home made lasagna for dinner tonight and I got 6 very large portions out of it -two to eat today and tomorrow and four for the freezer. I really must do more batch cooking as my freezer is pretty empty at the moment. The spur for making the lasagna was some frozen spinach approaching its "best before" date. It looks and smells delicious!
Yep, we got those cold temperatures here today. Sun was shining however so I curled up on the couch to enjoy the heat on my face.

DeleteWe have been plunged into fog for the last couple of days here and it feels very murky after the brigher light we had earlier in the week with all the snow. Haven't had lasagne for ages - will put it on the menu for after I have indulged myself in a few days of meals with leeks (have got withdrawal symptoms!).
ReplyDeleteVery rarely have fog here except for the occasional temperature inversion. I will be sick of lasagna once I have eaten my store from the freezer!

DeleteThat sunshine & above zero temperatures yesterday was glorious. I even persuaded Mr Man to go for a walk with me. I have been doing a far amount of cook once, eat twice, lately. I needed that break from endless meal planning & cooking. Veggie lasagna sounds like a good idea. Happy Weekend.

ReplyDeleteAt this time of year, especially, I find some sunshine brightens my mood. The long gloomy days can be depressing, so it's great to notice the evenings staying lighter for longer. X
